Ingredients:

60g butter, softened
50g light brown sugar
1 egg yolk
1 teaspoon vanilla extract
90g plain flour
½ teaspoon baking powder
¼ teaspoon salt
100g rolled oats
50g dried cranberries

Cooking Instructions:

Preheat oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper.
In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
In a separate bowl, sift together the flour, baking powder and salt. Add this to the creamed mixture and mix until just combined. Stir in the oats and cranberries until evenly distributed throughout the dough.
Drop spoonfuls of dough onto the prepared baking tray, leaving enough space between each cookie for them to spread during baking. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
