Ingredients:

1/2 cup all
purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons butter, softened
2 tablespoons low sugar or sugar free sweetener of your choice (e.g. stevia)
1 egg white
1/4 cup crushed pineapple, drained

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a baking sheet with butter or cooking spray.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a separate bowl, cream together the butter and sweetener until light and fluffy. Beat in the egg white until combined.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the crushed pineapple until evenly distributed throughout the dough.
Drop spoonfuls of dough onto the prepared baking sheet about 2 inches apart from each other and flatten slightly with your fingers or a fork to form cookie shapes. Bake for 12-15 minutes or until golden brown on top and lightly browned on the bottom edges of each cookie. Allow to cool before serving. Enjoy!
