Ingredients:

2 large eggs
2 tablespoons shredded cheese of your choice
2 slices of ham (optional)
1/4 cup diced bell peppers or other vegetables of your choice
2 tablespoons salsa of your choice
1/4 avocado sliced or diced (optional)
1 teaspoon fresh herbs of your choice (e.g. cilantro or parsley)
1 whole wheat tortilla wrap

Cooking Instructions:

Heat a non-stick skillet over medium heat.
Crack the eggs into the skillet and scramble until cooked through.
Add the shredded cheese and ham to the eggs and stir until melted.
Add the bell peppers or other vegetables to the egg mixture and cook for an additional 3 minutes until softened.
Remove from heat and set aside in a bowl.
Place the tortilla wrap on a plate and spread the salsa over it evenly.
Top with the egg mixture followed by avocado slices or diced pieces if desired. 8 Sprinkle with fresh herbs of your choice before folding in half to form a quesadilla shape. 9 Heat a non-stick skillet over medium heat again and place the quesadilla in it for 3 minutes per side until golden brown and crispy on both sides. 10 Serve warm with extra salsa if desired!
