Ingredients:

2 cups gluten
free all
purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons butter, melted and cooled slightly
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup buttermilk

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick cooking spray. Set aside.
In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda and salt until combined. Set aside.
In a large bowl, using an electric mixer on medium speed, beat together the melted butter and sugar until light and fluffy (about 2 minutes). Add in the eggs one at a time, beating well after each addition. Beat in the vanilla extract until combined.
With the mixer on low speed, add in half of the dry ingredients and mix until just combined. Add in the buttermilk and mix until just combined. Add in remaining dry ingredients and mix until just combined (do not overmix).
Pour batter into prepared loaf pan and spread evenly with a spatula or spoon. Bake for 35-40 minutes or until a toothpick inserted into center comes out clean or with moist crumbs attached (do not overbake). Allow to cool completely before slicing and serving. Enjoy!
