Ingredients:

2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced bell pepper (any color)
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
Salt and pepper to taste
2 boneless skinless chicken breasts, cut into cubes
2 whole wheat tortillas
1/4 cup hummus
1/4 cup shredded lettuce

Cooking Instructions:

Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook for 3-4 minutes until softened.
Add the garlic powder, cumin, salt and pepper to the skillet and stir to combine.
Add the chicken cubes to the skillet and cook for 5-7 minutes until cooked through.
Place a tortilla on a plate or cutting board and spread with hummus. Top with the cooked chicken mixture, lettuce, and any other desired toppings such as tomatoes or avocado slices.
Fold up the sides of the tortilla around the filling to form a wrap shape then cut in half if desired before serving. Enjoy!
