Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, peeled and diced
1 teaspoon ground coriander
½ teaspoon ground cumin
¼ teaspoon ground turmeric
½ cup vegetable broth or water
¼ cup coconut milk or cream
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots, coriander, cumin and turmeric to the pan and stir to combine. Cook for another 3-4 minutes until fragrant.
Pour in the vegetable broth or water and bring to a boil. Reduce heat to low and simmer for 15 minutes until the carrots are tender.
Remove from heat and blend with an immersion blender until smooth. Stir in the coconut milk or cream until combined. Season with salt and pepper to taste.
Serve warm with crusty bread or crackers if desired. Enjoy!
