Ingredients:

1 croissant
2 large eggs
2 tablespoons grated cheese (cheddar or mozzarella)
1 tablespoon chopped fresh herbs (parsley or chives)
1 tablespoon butter or oil for cooking
Salt and pepper to taste
½ avocado, sliced

Cooking Instructions:

Preheat a non-stick pan over medium heat.
Cut the croissant in half and toast it lightly in the pan. Set aside.
In a bowl, whisk together the eggs with the grated cheese and herbs until combined. Season with salt and pepper to taste.
Add the butter or oil to the pan and pour in the egg mixture. Cook for about 5 minutes until the eggs are set but still moist.
