Ingredients:

2 tablespoons vegetable oil
1/2 cup diced onion
1/2 cup diced carrots
1/2 cup diced celery
2 cloves garlic, minced
1/2 pound shrimp, peeled and deveined
4 ounces mushrooms, sliced
2 cups cooked white rice
2 cups bok choy, chopped
2 tablespoons soy sauce

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the onion, carrots and celery and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute.
Add the shrimp to the skillet and cook until they are just pink on both sides, about 3 minutes. Add the mushrooms to the skillet and cook for an additional 3 minutes.
Add the cooked rice to the skillet along with the bok choy and soy sauce. Cook until everything is heated through and combined together, about 5 minutes more. Serve hot.
