Ingredients:

1 cup vegetable broth
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup diced onion
2 cloves garlic, minced
2 tablespoons vegan butter or margarine
2 tablespoons all
purpose flour
1 teaspoon dried thyme leaves
1/2 teaspoon ground black pepper
1/4 teaspoon salt
2 tablespoons nutritional yeast flakes
2 tablespoons vegan chicken
style seasoning
1/2 cup plain unsweetened almond milk or other non
dairy milk of choice
3 tablespoons vegan dumplings (store bought or homemade)
2 tablespoons chopped fresh parsley (optional)

Cooking Instructions:

In a large pot over medium heat, add the vegetable broth, carrots, celery, onion and garlic. Simmer for 10 minutes until the vegetables are tender.
Add the vegan butter or margarine to the pot and stir until melted. Add the flour and stir until combined. Cook for an additional minute.
Add the thyme leaves, black pepper, salt, nutritional yeast flakes and vegan chicken-style seasoning to the pot and stir until combined. Slowly add in the almond milk while stirring continuously until combined. Simmer for 5 minutes until thickened slightly.
Add the vegan dumplings to the pot and simmer for an additional 5 minutes until cooked through.
Serve hot with chopped fresh parsley (optional). Enjoy!
