Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 cans (14.5 ounces each) diced tomatoes with juice
1 teaspoon sugar
1 teaspoon dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups vegetable broth

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the tomatoes with their juice, sugar, oregano, salt and pepper to the pot and stir to combine. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the vegetable broth to the pot and stir to combine. Simmer for an additional 5 minutes or until heated through.
Use an immersion blender or regular blender to blend the soup until smooth (if using a regular blender be sure to let it cool slightly before blending). Serve warm with your favorite toppings such as croutons or shredded cheese if desired.
