Ingredients:

1 tablespoon olive oil
1/2 cup diced ham
1/2 cup diced bell pepper
1/2 cup diced onion
2 cloves garlic, minced
2 cups spinach leaves
2 large eggs
1/4 cup shredded cheese of your choice (cheddar or mozzarella work well)
2 tablespoons salsa of your choice

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the ham and cook until lightly browned.
Add the bell pepper, onion and garlic to the skillet and cook until softened.
Add the spinach leaves to the skillet and cook until wilted.
Crack the eggs into the skillet and scramble them together with the vegetables until cooked through.
Sprinkle the cheese over top of the eggs and vegetables and let it melt for a few minutes before stirring it in.
Top with salsa before serving.
