Ingredients:

100g butter, softened
75g light brown sugar
50g caster sugar
1 large egg
1 teaspoon vanilla extract
150g plain flour
½ teaspoon baking powder
¼ teaspoon bicarbonate of soda
150g peanut butter chips or chunks
75g dark chocolate chips or chunks

Cooking Instructions:

Preheat the oven to 180°C/160°C fan/gas mark
Line two baking trays with parchment paper.
In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla extract until combined.
In a separate bowl, sift together the flour, baking powder and bicarbonate of soda. Gradually add this to the wet ingredients until fully combined. Stir in the peanut butter chips and chocolate chips until evenly distributed throughout the dough.
Using a tablespoon measure, scoop out balls of cookie dough onto the prepared baking trays, leaving enough space between each cookie for them to spread during cooking. Bake for 15-20 minutes or until golden brown around the edges but still soft in the middle. Allow to cool on a wire rack before serving.
