Ingredients:

1/2 cup butter (softened)
1/4 cup low
calorie sweetener (or sugar free alternative)
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
1 cup all
purpose flour
2 tablespoons low
calorie jam or jelly (or sugar free alternative)

Cooking Instructions:

Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a medium bowl, cream together the butter and sweetener until light and fluffy. Add in the vanilla and almond extracts and mix until combined.
Gradually add in the flour until a soft dough forms.
Roll the dough into small balls about 1 inch in diameter and place on the prepared baking sheet about 2 inches apart from each other. Using your thumb or the back of a spoon, make an indentation in each cookie ball.
Fill each indentation with about ½ teaspoon of jam or jelly of your choice.
