Ingredients:

100g of dates (pitted and chopped)
50g of almond flour
2 tablespoons of coconut oil (melted)
1 teaspoon of vanilla extract
1/4 teaspoon of baking soda

Cooking Instructions:

Preheat oven to 350°F (175°C).
In a medium bowl, mix together the almond flour, baking soda and melted coconut oil until combined.
Add in the chopped dates and vanilla extract and mix until everything is evenly distributed.
Line a baking sheet with parchment paper and spoon out 1 tablespoon-sized balls of cookie dough onto the sheet.
Bake for 12-15 minutes or until golden brown on top. Allow to cool before serving.
