Ingredients:

75g spaghetti noodles
2 tablespoons tomato paste
1/2 cup vegetable broth or water
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano leaves
1/4 teaspoon dried basil leaves
Salt and pepper to taste
2 tablespoons breadcrumbs or oat flour (optional)
2 tablespoons nutritional yeast (optional) For the Meatballs:
100g lean ground beef or turkey
1 tablespoon tomato paste
1 tablespoon breadcrumbs or oat flour (optional)
1 tablespoon nutritional yeast (optional)
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 350°F (175°C).
Cook the spaghetti noodles according to package instructions. Drain and set aside.
In a medium bowl, mix together the tomato paste, vegetable broth or water, garlic powder, onion powder, oregano leaves, basil leaves, salt and pepper until combined. Set aside.
In a separate bowl, mix together the ground beef or turkey with the tomato paste, breadcrumbs or oat flour (if using), nutritional yeast (if using), salt and pepper until combined. Form into small meatballs about the size of a golf ball. Place on a baking sheet lined with parchment paper and bake for 15 minutes until cooked through.
Add the cooked meatballs to the sauce mixture in the medium bowl and stir until combined. Simmer over low heat for 10 minutes until sauce thickens slightly.
Add cooked spaghetti noodles to the sauce mixture in the medium bowl and stir until combined. Simmer over low heat for 5 minutes until heated through. Serve immediately with freshly grated Parmesan cheese if desired!
