Ingredients:

200g pappardelle pasta
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
200g wild boar mince
2 tablespoons tomato paste
1 teaspoon dried oregano leaves
1/2 teaspoon ground black pepper
400g can diced tomatoes
2 tablespoons chopped fresh parsley leaves

Cooking Instructions:

Bring a large pot of salted water to the boil over high heat. Add the pappardelle and cook for 8–10 minutes or until al dente. Drain and set aside.
Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook for 3–4 minutes or until softened. Add the wild boar mince and cook for 5–7 minutes or until browned.
Stir in the tomato paste, oregano and pepper and cook for 1 minute or until fragrant. Add the diced tomatoes and bring to a simmer over medium heat. Simmer for 10–15 minutes or until thickened slightly.
Add the cooked pappardelle to the saucepan and stir to combine. Cook for 2–3 minutes or until heated through. Sprinkle with parsley leaves before serving.
