Ingredients:

200g smoked haddock fillet
1 large potato, peeled and diced into small cubes
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon smoked paprika
500ml vegetable stock or fish stock
150ml double cream or single cream
2 tablespoons butter or olive oil
Salt and pepper to taste

Cooking Instructions:

Heat the butter or olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened.
Add the smoked paprika and stir for 1 minute.
Add the diced potato and stir to combine. Cook for 5 minutes until the potatoes are beginning to soften.
Pour in the vegetable stock or fish stock and bring to a boil. Reduce heat to low and simmer for 10 minutes until the potatoes are cooked through.
Add the smoked haddock fillet to the pan and cook for 5 minutes until it is cooked through.
Remove from heat and stir in the cream until combined. Season with salt and pepper to taste before serving hot with crusty bread or boiled rice if desired.
