Ingredients:

200g cooked lobster meat, chopped into small pieces
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon smoked paprika
500ml vegetable stock or fish stock
100ml double cream
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened.
Add the tomato paste and smoked paprika and cook for 1 minute more.
Pour in the vegetable or fish stock and bring to a boil. Reduce the heat to low and simmer for 15 minutes.
Add the lobster meat and simmer for 5 minutes more.
Remove from heat and stir in the double cream until combined. Season with salt and pepper to taste.
Serve hot with crusty bread or crackers on the side if desired. Enjoy!
