Ingredients:

2 tablespoons vegetable oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons fish sauce
1 teaspoon sugar
4 cups chicken broth or stock
2 boneless skinless chicken breasts, cut into thin strips
200g dried rice noodles
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro leaves

Cooking Instructions:

Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another minute. Stir in the fish sauce and sugar.
Pour in the chicken broth or stock and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the chicken strips to the pot and simmer for another 10 minutes or until cooked through.
Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
To serve, divide the noodles among four bowls and top with the chicken soup mixture. Drizzle with lime juice and sprinkle with cilantro leaves before serving.
