Ingredients:

2 tablespoons vegetable oil
1/2 cup diced chicken breast
1/4 cup chopped onion
1/4 cup chopped carrots
1/4 cup chopped celery
2 cloves garlic, minced
2 tablespoons fish sauce
2 tablespoons soy sauce
8 spring roll wrappers

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the chicken and cook until lightly browned.
Add the onion, carrots, celery and garlic to the skillet and cook for 3 minutes.
Add the fish sauce and soy sauce to the skillet and stir to combine. Cook for an additional 3 minutes or until vegetables are tender.
Remove from heat and let cool slightly before assembling spring rolls.
To assemble spring rolls, place a wrapper on a flat surface with one corner pointing towards you. Place about 2 tablespoons of filling in the center of the wrapper and fold up bottom corner over filling. Fold in both sides of wrapper towards center then roll up tightly away from you until completely sealed. Repeat with remaining wrappers and filling.
Heat a large skillet over medium heat and add enough oil to cover bottom of pan by about 1/4 inch deep. When oil is hot, add spring rolls to pan in batches so they are not overcrowded (about 4 at a time). Fry for about 3 minutes per side or until golden brown and crispy on all sides. Remove from pan onto paper towel lined plate to drain excess oil before serving warm with dipping sauce of choice (such as sweet chili sauce).
