Ingredients:

100g ground pork
1/2 cup shredded carrots
1/4 cup chopped onion
2 cloves garlic, minced
1/4 teaspoon ground black pepper
2 tablespoons fish sauce
1 tablespoon soy sauce
2 tablespoons vegetable oil
8 spring roll wrappers

Cooking Instructions:

In a large bowl, combine the ground pork, carrots, onion, garlic, black pepper, fish sauce and soy sauce. Mix until all ingredients are evenly distributed.
Heat the vegetable oil in a large skillet over medium heat. Add the pork mixture and cook for 5 minutes or until the pork is cooked through. Remove from heat and set aside to cool slightly.
To assemble the spring rolls, place one wrapper on a clean work surface and spoon about 2 tablespoons of the pork mixture onto the center of the wrapper. Fold in the sides of the wrapper and then roll up tightly to form a cylinder shape. Repeat with remaining wrappers and filling.
Heat a large skillet over medium heat and add enough oil to cover the bottom of the pan. Working in batches, add the spring rolls to the hot oil and fry for 3 minutes or until golden brown on all sides. Remove from heat and drain on paper towels before serving warm with your favorite dipping sauce.
