Ingredients:

120g pork mince
60g peeled shrimp
2 tablespoons vegetable oil
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1/4 teaspoon ground turmeric powder
1/4 teaspoon ground black pepper powder
2 tablespoons fish sauce
1/2 cup bean sprouts
2 tablespoons chopped spring onions
2 tablespoons chopped coriander leaves
1 cup all
purpose flour
1 cup water

Cooking Instructions:

In a bowl, mix together the pork mince, shrimp, vegetable oil, garlic, ginger, turmeric powder and black pepper powder. Set aside.
Heat a non-stick pan over medium heat. Add the pork mixture to the pan and cook for 5 minutes or until the pork is cooked through. Add the fish sauce and stir to combine. Remove from heat and set aside.
In a separate bowl, mix together the bean sprouts, spring onions and coriander leaves. Set aside.
In another bowl, mix together the all-purpose flour and water until it forms a smooth batter. Heat a non-stick pan over medium heat and pour in half of the batter to form a thin crepe layer on the bottom of the pan. Cook for 3 minutes or until golden brown on one side then flip over to cook on the other side for another 3 minutes or until golden brown as well. Remove from heat and set aside on a plate lined with kitchen paper towel to absorb any excess oil from cooking process. Repeat with remaining batter to make two crepes in total.
Place one crepe onto a plate then top with half of the pork mixture followed by half of the bean sprout mixture then top with another crepe followed by remaining pork mixture then remaining bean sprout mixture then top with last crepe layer on top to form a stack of three layers in total (one layer of crepes sandwiched between two layers of filling). Serve immediately while still hot!
