Ingredients:

200g rice flour
200ml water
2 tablespoons vegetable oil
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon baking powder For the Filling:
100g tofu, diced into small cubes
1/2 cup mushrooms, diced into small cubes
1/4 cup carrots, diced into small cubes
1/4 cup bell peppers, diced into small cubes

Cooking Instructions:

In a large bowl, mix together the rice flour, water, vegetable oil, salt and sugar until combined. Add in the baking powder and mix until everything is well incorporated. Set aside.
In a separate bowl, mix together all of the ingredients for the filling until combined. Set aside.
Heat up a steamer over medium heat and grease it with some vegetable oil or non-stick cooking spray.
Take a spoonful of the batter and spread it evenly over the steamer’s surface using a circular motion to form an even layer that is about 1/8 inch thick. Steam for about 2 minutes or until cooked through and slightly translucent. Remove from heat and transfer to a plate or cutting board to cool down slightly before adding in your filling ingredients.
Place some of your filling ingredients in the center of your steamed rice roll and fold over one side to cover it completely before rolling up tightly like a burrito or spring roll wrap. Secure with toothpicks if needed and repeat with remaining batter and filling ingredients until all are used up.
Serve warm with your favorite dipping sauce such as hoisin sauce or soy sauce mixed with chili paste or sesame oil for extra flavor! Enjoy!
