Ingredients:

200g thick rice noodles
1 tablespoon vegetable oil
1 teaspoon garlic, minced
2 tablespoons fish sauce
2 tablespoons soy sauce
1 teaspoon sugar
2 cups chicken broth or vegetable broth
½ cup sliced mushrooms
½ cup diced carrots
½ cup diced onions
¼ cup chopped green onions

Cooking Instructions:

Soak the rice noodles in hot water for 10 minutes until softened. Drain and set aside.
Heat the oil in a large pot over medium heat. Add the garlic and cook for 1 minute until fragrant.
Add the fish sauce, soy sauce, sugar, and chicken broth to the pot and bring to a boil. Reduce heat to low and simmer for 5 minutes.
Add the mushrooms, carrots, onions, and green onions to the pot and simmer for an additional 5 minutes until vegetables are tender.
Add the noodles to the pot and cook for an additional 5 minutes until noodles are cooked through. Serve hot with your favorite toppings such as cilantro or lime wedges if desired.
