Ingredients:

1 cup basmati rice
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon turmeric powder
½ teaspoon cinnamon powder
¼ teaspoon ground cardamom powder
2 cups vegetable broth or water
½ cup cooked lentils
¼ cup barberries

Cooking Instructions:

Rinse the basmati rice in cold water until the water runs clear. Drain and set aside.
Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, coriander, turmeric, cinnamon and cardamom to the pan and cook for another minute or two until fragrant.
Add the vegetable broth or water to the pan along with the lentils and barberries. Bring to a boil then reduce heat to low and simmer for 15 minutes or until most of the liquid has been absorbed by the rice.
Add in the rinsed basmati rice to the pan and stir to combine all ingredients together evenly. Cover with a lid and cook for an additional 10 minutes or until all of liquid has been absorbed by the rice. Fluff with a fork before serving warm as is or topped with fresh herbs such as parsley or cilantro if desired.
