Vegan Persian-Style Adas Polo

This vegan version of classic Persian Adas Polo is made with lentils, raisins, basmati rice, vegetable broth or water, olive oil, cumin, salt & pepper for an easy yet flavorful meal that can be served warm or at room temperature!

Ingredients:

1/2 cup dry green or brown lentils
1/2 cup basmati rice
1/4 cup raisins
2 cups vegetable broth or water
1 tablespoon olive oil
1 teaspoon ground cumin
Salt and pepper to taste

Cooking Instructions:

Rinse the lentils and rice in a fine mesh strainer until the water runs clear.
Heat the olive oil in a medium saucepan over medium heat. Add the cumin and stir for about 30 seconds until fragrant.
Add the lentils and rice to the pan and stir to coat with the oil and spices.
Pour in the vegetable broth or water and bring to a boil over high heat. Reduce heat to low, cover with a lid, and simmer for 20 minutes or until all of the liquid has been absorbed by the lentils and rice.
Remove from heat and stir in the raisins. Cover again with lid for 5 minutes before serving.
Season with salt and pepper to taste before serving warm or at room temperature.
