Ingredients:

1 cup basmati rice
1/2 cup carrots (diced)
1/4 cup raisins
2 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom

Cooking Instructions:

Preheat oven to 350°F.
Rinse the basmati rice in a sieve until the water runs clear. Place the rinsed rice in a medium saucepan and cover with 2 cups of water. Bring to a boil over high heat then reduce heat to low and simmer for 15 minutes or until the water is absorbed.
In a small bowl combine the diced carrots, raisins, olive oil, salt, cinnamon and cardamom together until evenly mixed.
Grease an oven safe dish with olive oil or vegan butter then spread half of the cooked basmati rice in an even layer on the bottom of the dish. Top with the carrot mixture then spread remaining cooked basmati rice over top in an even layer.
Cover with foil and bake for 30 minutes or until heated through and vegetables are tender.
Serve warm or at room temperature with your favorite accompaniments such as vegan yogurt or chutney if desired!
