Vegan Persian Style Loobia Polo

Ingredients:

1 cup long grain white rice
1/2 cup green beans, chopped into small pieces
2 tablespoons olive oil
1/4 teaspoon turmeric powder
1/4 teaspoon ground black pepper
Salt to taste

Cooking Instructions:

Rinse the rice in cold water until the water runs clear. Drain and set aside.
Heat the olive oil in a medium saucepan over medium heat. Add the green beans and sauté for 3-4 minutes until they are lightly browned.
Add the rice to the pan and stir to combine with the green beans. Add the turmeric powder, black pepper and salt to taste and stir again to combine all ingredients together.
Pour in 2 cups of water and bring to a boil over high heat. Once boiling, reduce heat to low and cover with a lid. Simmer for 20-25 minutes or until all liquid is absorbed and rice is cooked through.
Remove from heat and fluff with a fork before serving hot or cold as desired!
