Ingredients:

1 eggplant, diced into small cubes
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon turmeric powder
½ teaspoon chili powder (optional)
2 tablespoons tomato paste
¼ cup vegetable broth or water
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C). Place the diced eggplant on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Bake for 25 minutes or until golden brown.
Heat the remaining olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, coriander, turmeric powder and chili powder (if using) and cook for another minute or two until fragrant.
Add the tomato paste and vegetable broth or water to the skillet and stir to combine. Bring to a simmer then reduce heat to low and simmer for 10 minutes or until sauce has thickened slightly.
Add the roasted eggplant to the skillet and stir to combine everything together. Simmer for another 5 minutes or until eggplant is cooked through. Taste for seasoning and adjust if necessary before serving hot over cooked rice or quinoa if desired.
