Ingredients:

½ cup basmati rice
¼ cup fava beans (dried)
½ cup butternut squash (diced)
2 tablespoons olive oil
1 teaspoon turmeric powder
1 teaspoon ground cumin powder
Salt to taste

Cooking Instructions:

Soak the fava beans in water for at least 8 hours or overnight. Drain the water and set aside.
In a medium saucepan, heat the olive oil over medium heat. Add the diced butternut squash and sauté for 3-4 minutes until lightly browned.
Add the drained fava beans to the pan and stir to combine with the squash. Cook for another 3-4 minutes until the beans are lightly browned as well.
Add the basmati rice to the pan and stir to combine with the other ingredients. Cook for another 2-3 minutes until all of the ingredients are well combined and fragrant.
Add 2 cups of water to the pan along with turmeric powder, ground cumin powder, and salt to taste. Stir everything together and bring it to a boil over high heat. Once boiling, reduce heat to low and cover with a lid. Simmer for 25-30 minutes until all of the liquid has been absorbed by the rice and vegetables are cooked through completely.
Remove from heat and fluff with a fork before serving hot! Enjoy!
