Vegan Persian Style Baghali Polow

Ingredients:

1 cup basmati rice
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground cardamom
½ teaspoon ground cinnamon
¼ teaspoon black pepper
2 cups vegetable broth
1 cup cooked fava beans
½ cup cooked chickpeas
½ cup cooked green peas
¼ cup chopped fresh parsley leaves

Cooking Instructions:

Rinse the basmati rice in cold water until the water runs clear. Drain and set aside.
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened and lightly browned.
Add the spices and stir to combine. Cook for another minute or two until fragrant.
Add the vegetable broth and bring to a boil. Reduce heat to low and add the rinsed basmati rice. Stir to combine and cover with a lid. Simmer for 20 minutes or until all of the liquid has been absorbed by the rice.
Add the cooked fava beans, chickpeas, green peas, and parsley leaves to the pot with the rice and stir to combine. Cover with a lid again and simmer for an additional 10 minutes or until all of the liquid has been absorbed by the rice again.
Remove from heat and fluff with a fork before serving hot or warm with your favorite accompaniments such as yogurt or pickles! Enjoy!
