Ingredients:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground cinnamon
¼ teaspoon ground black pepper
2 cups vegetable broth or water
2 cups cooked fava beans (or one 15
ounce can)
2 tablespoons fresh parsley leaves, chopped
2 tablespoons fresh cilantro leaves, chopped

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened and fragrant.
Add the turmeric, cumin, coriander, cinnamon and black pepper to the pot and stir to combine. Cook for another minute or two until fragrant.
Pour in the vegetable broth or water and bring to a boil. Reduce heat to low and simmer for 20 minutes.
Add the cooked fava beans to the pot along with the parsley and cilantro leaves. Simmer for an additional 20 minutes until all of the flavors have blended together nicely.
