Ingredients:

½ cup basmati rice
¼ cup green lentils
½ cup diced squash
1 tablespoon olive oil
1 teaspoon ground turmeric
Salt and pepper to taste

Cooking Instructions:

Rinse the basmati rice and lentils in cold water until the water runs clear. Drain and set aside.
Heat the olive oil in a medium-sized saucepan over medium heat. Add the diced squash and sauté for 3-4 minutes until lightly browned.
Add the rinsed rice and lentils to the pan along with the turmeric, salt, and pepper. Stir to combine all ingredients together.
Add 2 cups of water to the pan and bring to a boil over high heat. Once boiling, reduce heat to low and cover with a lid. Simmer for 20-25 minutes or until all liquid has been absorbed by the rice and lentils.
Remove from heat and fluff with a fork before serving hot as is or with your favorite accompaniments such as yogurt or pickles!
