Ingredients:

2 tablespoons of olive oil
2 large leeks, sliced into thin rounds
2 cloves of garlic, minced
2 medium potatoes, peeled and diced into small cubes
1 cup of vegetable stock or water
4 slices of bacon, diced into small pieces
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat.
Add the leeks and garlic to the pot and cook until softened, about 5 minutes.
Add the potatoes to the pot and stir to combine. Cook for another 5 minutes.
Pour in the vegetable stock or water and bring to a boil. Reduce heat to low and simmer for 15 minutes or until the potatoes are tender.
Add the bacon pieces to the pot and cook for another 5 minutes or until cooked through.
Season with salt and pepper to taste before serving hot.
