Ingredients:

150g cooked lobster meat, diced into small cubes
1 large onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons butter
2 tablespoons plain flour
500ml fish stock or vegetable stock (low sodium)
250ml double cream
2 tablespoons chopped fresh parsley
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil and butter in a large saucepan over medium heat. Add the onion and garlic and cook until softened.
Add the flour and stir to combine. Cook for 1 minute before gradually adding the stock while stirring continuously until all of the stock has been added. Bring to a simmer and cook for 10 minutes until thickened.
Add the lobster meat, cream, parsley, salt and pepper to taste and simmer for 5 minutes until heated through. Serve hot with crusty bread or boiled potatoes.
