Ingredients:

150g orzo
1 red pepper, diced
1 yellow pepper, diced
1 red onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
2 tablespoons freshly chopped parsley

Cooking Instructions:

Preheat oven to 200°C.
In a large bowl, combine the diced peppers, onion, garlic, olive oil, oregano, basil, salt and pepper. Mix until all the vegetables are evenly coated.
Spread the vegetables onto a baking sheet and roast in the oven for 20-25 minutes, stirring occasionally, until the vegetables are tender and lightly browned.
Meanwhile, cook the orzo according to package instructions.
Once the orzo and vegetables are cooked, combine them in a large bowl and mix until combined.
Sprinkle with freshly chopped parsley and serve.
