Ingredients:

1 small sweet potato (150g), peeled and cubed
2 tablespoons olive oil
½ cup black rice (100g)
1 avocado (200g), diced
2 tablespoons white miso paste
2 tablespoons apple cider vinegar
2 teaspoons honey
1 teaspoon sesame oil

Cooking Instructions:

Preheat the oven to 400°F/200°C. Place the cubed sweet potato on a baking sheet lined with parchment paper and drizzle with olive oil. Roast for 25-30 minutes until golden brown and tender. Set aside to cool slightly.
Meanwhile, cook the black rice according to package instructions until tender but still slightly chewy. Drain any excess water and set aside to cool slightly.
In a small bowl, whisk together the miso paste, apple cider vinegar, honey, and sesame oil until combined into a dressing consistency. Set aside until ready to use.
In a large bowl combine the cooked sweet potato cubes, cooked black rice, diced avocado and pour over the miso dressing mixture stirring gently to combine all ingredients together evenly in the bowl until everything is coated in the dressing mixture evenly throughout the salad ingredients. Serve immediately or store in an airtight container in the refrigerator for up to 3 days before serving again cold or at room temperature as desired.
