Ingredients:

2 carrots, peeled and chopped
2 parsnips, peeled and chopped
2 sweet potatoes, peeled and chopped
1 onion, peeled and chopped
2 cloves of garlic, minced
2 tablespoons of olive oil
1 cup of pearl barley
2 cups of vegetable stock
2 tablespoons of honey
2 tablespoons of Dijon mustard
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 400°F (200°C).
Place the carrots, parsnips, sweet potatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 25-30 minutes, or until the vegetables are tender.
Meanwhile, bring the vegetable stock to a boil in a medium saucepan. Add the pearl barley and reduce the heat to low. Simmer for 20-25 minutes, or until the barley is tender.
In a small bowl, whisk together the honey and mustard.
Once the vegetables and barley are cooked, combine them in a large bowl. Drizzle with the honey mustard dressing and toss to combine.
