Ingredients:

1 head of cauliflower, cut into florets
1 cup of cooked lentils
2 tablespoons of olive oil
1 teaspoon of garlic powder

2 tablespoons of freshly squeezed lemon juice
1 teaspoon of Dijon mustard

Cooking Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the cauliflower florets on the baking sheet and drizzle with 2 tablespoons of olive oil. Sprinkle with garlic powder, salt, and pepper. Toss to coat evenly.
Roast in preheated oven for 20 minutes or until golden brown and tender.
Meanwhile, prepare the lemon vinaigrette by combining 2 tablespoons of olive oil, 2 tablespoons of freshly squeezed lemon juice, 1 teaspoon of Dijon mustard, salt, and pepper in a small bowl or jar. Whisk or shake until combined.
