Ingredients:

1/2 head cauliflower, cut into florets
1/2 head broccoli, cut into florets
2 tablespoons olive oil
Salt and pepper to taste
2 tablespoons tahini paste
2 tablespoons freshly squeezed lemon juice
1 tablespoon honey or maple syrup (optional)

Cooking Instructions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the cauliflower and broccoli florets on the baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
Roast for 20-25 minutes until golden brown and tender.
Meanwhile, prepare the dressing by whisking together the tahini paste, lemon juice, honey or maple syrup (if using), salt and pepper in a small bowl until smooth.
Once the vegetables are done roasting, transfer them to a large bowl and pour over the dressing. Toss to combine everything together until evenly coated in dressing. Serve warm or cold as desired!
