Ingredients:

1 cup quinoa
1 red pepper, diced
1 zucchini, diced
2 cloves garlic, minced
2 tablespoons olive oil
Juice of 1 lemon
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C). Place diced red pepper and zucchini on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast for 15 minutes or until vegetables are tender.
Meanwhile, cook quinoa according to package instructions. Once cooked, fluff with a fork and set aside to cool slightly.
In a small bowl, whisk together garlic, olive oil, lemon juice, salt and pepper until combined.
In a large bowl combine cooked quinoa with roasted vegetables and pour over the dressing. Toss until everything is evenly coated in the dressing. Serve warm or cold.
