Ingredients:

1/2 cup quinoa
1/2 cup grape tomatoes
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons lemon juice
1 tablespoon honey
1 tablespoon Dijon mustard
2 tablespoons olive oil

Cooking Instructions:

Preheat oven to 400°F.
Place the quinoa in a medium saucepan and cover with 2 cups of water. Bring to a boil, reduce heat to low, and simmer for 15 minutes.
Meanwhile, place the grape tomatoes on a baking sheet and drizzle with olive oil. Sprinkle with garlic powder, salt, and pepper. Roast in the oven for 15 minutes.
In a small bowl, whisk together the lemon juice, honey, Dijon mustard, and olive oil.
