Ingredients:

1 cup quinoa, cooked according to package instructions
1 cup cherry tomatoes, halved
1/2 cup artichoke hearts, chopped
2 tablespoons olive oil
2 cloves garlic, minced
Juice of 1 lemon
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
Place the cherry tomatoes on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the oven for 20 minutes.
Meanwhile, heat the remaining tablespoon of olive oil in a small skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Remove from heat and stir in the lemon juice. Set aside.
In a large bowl combine the cooked quinoa, roasted cherry tomatoes, artichoke hearts and garlic lemon dressing. Toss to combine and season with salt and pepper to taste. Serve warm or cold.
