Ingredients:

1 cup quinoa
1 acorn squash, cut into cubes
2 tablespoons olive oil
2 cloves garlic, minced
2 cups arugula leaves
1/4 cup tahini
Juice of 1 lemon
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
Place the cubed acorn squash on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper to taste. Roast in the preheated oven for 20-25 minutes until golden brown and tender.
Meanwhile, cook the quinoa according to package instructions. Once cooked, set aside to cool slightly.
In a large bowl combine the cooked quinoa, roasted acorn squash cubes, arugula leaves and minced garlic cloves.
In a small bowl whisk together the tahini and lemon juice until smooth and creamy then season with salt and pepper to taste. Pour over the salad ingredients in the large bowl and toss everything together until evenly coated in the dressing. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
