Ingredients:

500g pork tripe
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
200g chorizo sausage, sliced
2 bay leaves
1 teaspoon smoked paprika
500ml chicken stock
2 potatoes, peeled and cubed

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Add the red bell pepper and chorizo sausage and cook for another 5 minutes.
Add the pork tripe to the pot along with the bay leaves and smoked paprika. Pour in the chicken stock and bring to a boil. Reduce heat to low and simmer for 1 hour 15 minutes or until tripe is tender.
Add potatoes to the pot during last 15 minutes of cooking time.
Serve hot with crusty bread or boiled potatoes on the side. Enjoy!
