Ingredients:

1 tablespoon olive oil
1 small onion, diced
1 garlic clove, minced
200g chicken breast, cut into cubes
1 teaspoon paprika powder
½ teaspoon cumin powder
¼ teaspoon ground coriander powder
¼ teaspoon chili powder (optional)
1 can (400g) chopped tomatoes
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the chicken cubes to the skillet and season with paprika powder, cumin powder, ground coriander powder, chili powder (optional), salt and pepper to taste. Cook until the chicken is cooked through and lightly browned on all sides, about 8-10 minutes.
Add the chopped tomatoes to the skillet and stir to combine with the other ingredients. Simmer for 10-15 minutes or until sauce has thickened slightly. Taste for seasoning and adjust if necessary before serving over cooked rice or pasta of your choice.
