Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1/2 cup cooked white beans
1/2 cup cooked black beans
1/2 cup cooked red beans
1/4 cup diced chorizo sausage
2 tablespoons tomato paste
2 cups vegetable broth
Salt and pepper to taste
2 tablespoons chopped parsley for garnish (optional)

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the white beans, black beans, red beans, chorizo sausage and tomato paste to the pan and stir to combine. Cook for an additional 5 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes or until the flavors have blended together. Season with salt and pepper to taste.
Serve hot with chopped parsley as a garnish (optional). Enjoy!
