Ingredients:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon ground coriander seed
¼ teaspoon red pepper flakes
2 cups vegetable broth
1 can (15 ounces) white beans, drained and rinsed
2 tablespoons tomato paste
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots and celery to the pot and cook for another 5 minutes. Stir in the smoked paprika, cumin, coriander seed and red pepper flakes. Cook for another minute until fragrant.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and add the white beans and tomato paste. Simmer for 30 minutes or until vegetables are tender. Season with salt and pepper to taste before serving.
