Ingredients:

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, diced
1 red bell pepper, diced
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
400g can of white beans (drained and rinsed)
200g chorizo sausage (sliced)
500ml vegetable stock

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened (about 5 minutes).
Add the carrots and bell pepper to the pot and cook for another 5 minutes.
Add the smoked paprika, cumin, oregano, salt and pepper to the pot and stir to combine. Cook for another minute or two until fragrant.
Add the beans, chorizo sausage and vegetable stock to the pot and bring to a boil. Reduce heat to low and simmer for 30 minutes or until vegetables are tender.
Serve hot with crusty bread or over cooked rice if desired. Enjoy!
