Ingredients:

500g pork loin or shoulder
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
2 tablespoons olive oil
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 200°C (400°F).
In a small bowl mix together the garlic, smoked paprika, cumin and oregano.
Rub the pork with the spice mixture and season with salt and pepper.
Heat the olive oil in an oven-proof skillet over medium-high heat. Add the pork and cook for 3-4 minutes per side until golden brown.
Transfer the skillet to the preheated oven and bake for 25-30 minutes or until cooked through (internal temperature should reach 70°C/160°F).
